Tofu with Eggplant and Green peppers

I made this last night. It has very few ingredients, but is very tasty and healthy.

Tofu Stir Fry

1 eggplant, sliced in rounds about 1/2" thick. brush both sides of slices with olive oil. lay on cookie sheet in single layer. sprinkle with kosher salt. bake in 350F oven for 30 minutes.

while eggplant is baking.
slice up a block of firm tofu in 1" x 1/4" squares. sprinkle with 2-3 Tbs. soy sauce and 1/2 tsp. powdered cayenne. Heat 2-3 Tbs vegetable oil in big frying pan. fry tofu slices until golden brown on both sides. Remove tofu.

In same frying pan saute over med-high heat 2 green peppers, sliced up. and 1 onion, sliced. When green peppers have brown specks, put back the tofu. Taste, add more soy sauce and cayenne powder as needed. Add 1/2 cup white wine. Stir together until most of wine absorbed. Toss in eggplant slices.

Serve with brown and wild rice.

Even my very picky hubby ate it and said he liked it! :)
