Apparently I have a son who wants Mexican food tonight.
He put some pintos into the crock all night.So I just made him some refries.

Mexican food sounds good.I have on hand:

Freshly made Chorizo
Freshly made ground beef
Mexican cheddar blended cheeses & Queso (cheated already made) cheese dip
Flour/corn tortilla and chips
Fresh Salsa
Lettuce/Tomatoes and such
Refries

Open for suggestions.

Chorizo and cheese blend enchiladas topped with cheese dip. After baking, top with salsa.

Refried beans mixed with salsa and topped with queso.

Side veggie salad dressed with lime juice or apple cider vinegar and oil with a little cumin, chili powder and salt.
 
Yummm...now I'm hungry for Mexican. :yum: I'd think about splitting your ingredients up into several dishes, depending upon how many you're feeding.

Burritos with the flour tortillas, chorizo, beef, refried beans, salsa, and cheese

Tacos with the corn tortillas, beef, lettuce, tomatoes, and salsa

Nachos would be good too, with the chips, cheese, meat and salsa....

So many possibilities! :)

I could fill the table with all sorts of tasty goodness...

Cook up the meats with the seasoning you want. put all out and let each person decide how to make their dinner tonight.

They could create a Supreme Nacho dish or make burritos or tacos.

That is just about everything one could have, like for thanksgiving Mexican style.

My favorite summer dishes currently are quesadillas, preferrably grilled and taco salads minus the tortillas, and tacos and burritos, The only thing I imagine that would be different, seasonally, is to turn the oven on and make enchilladas. Wash it all down with a cold cerveza or sparkling lemon/lime ade.
