Yesterday, for breakfast my mom and I made Oatmeal Cinnamon Waffles. The waffles had good hearty flavor and texture. The nice thing about this recipe is I had all the ingredients in the house. The only thing I did different when making this recipe was I reduced the amount of cinnmon to 1/2 tablespoon. I thought that 2 tablespoons would be a bit overwhelming.
Oatmeal Cinnamon Waffles
1 ¾ cups whole-wheat flour
1 tablespoon baking powder
¼ teaspoon salt
2 large eggs
1 ¾ cup low fat milk
½ cup butter, melted
2 cups quick cooking rolled oats
2 tablespoons cinnamon
2 tablespoons brown sugar
Preheat waffle iron to medium-high. In a large bowl, combine flour, baking powder, and salt. In a medium bowl, mix eggs, milk, and butter together, and then add to flour mixture and stir until just combined (batter will be a little lumpy). Add oats, cinnamon (I used only ½ tablespoon), and brown sugar and mix until just combined.
Coat waffle iron with either oil or cooking spray. Pour 1 cup batter at a time onto center of grids and close iron (or add batter according to waffle iron instructions). Bake until golden brown, 4 to 6 minutes.
Makes 5 waffles.
