IfI was to do this, in place of the pineapple, I'd use Adolph's Meat Tenderizer. Its active ingredient is the enzyme in the pineapple.

Sounds easier and less messy. I don't know what they used as the active ingredient back in the 1950s and 60s, but my mum used to use Adolph's Meat Tenderizer and it worked well.
