Called "reeding", the ridges on the US dollar, half-dollar, quarter, and dime were placed there because the coins were once minted from precious metals. The reeded edges discouraged counterfeiting and fraudulent use, such as shaving the edges to recover small amounts of the metal.
Now, most coins are made from nickel-clad copper. Nickels and pennies, which have smooth edges, have never contained precious metal and so were not reeded.
