Ginger, citrus and pecan salad
Grapefruit, peeled, sectioned and seeded
3 oranges, peeled and cut into bite-sized pieces
½ cups freshly squeezed orange juice
2 ½ tsp crystallized ginger, finely chopped
1/3 cups pecans, coarsely chopped (or your favourite type of nut)
Combine fruit, juice and ginger; mix gently. Sprinkle pecans on top of salad. Serves 4.
