Barbecued Bass

2 pounds bass fillets
1/2 cup oil
1/3 cup lemon juice
1/3 cup Cognac
3 Tbsp. soy sauce
1 clove garlic, crushed
1/2 cup sesame seeds
1 tsp. salt


Arrange fish fillets in single layer in shallow dish. Combine oil, lemon juice, Cognac, soy sauce, garlic, sesame seeds, and salt in bowl; mix well. Pour over fish, turning to coat well. Marinate fish for 30 minutes, turning once. Drain, reserving marinade. Grill fish on mesh grate, 4 inches from medium-hot coals. Grill on both sides until fish flakes easiley, basting with reserved marinade. Serve with remaining marinade. Yield: 6 servings.
 
Raine, HB has always filleted his bass, but last year I got him to freeze some of the bigger ones whole, and we cooked them on the grill with olive oil, lemon juice, salt and pepper.
We couldn't have had a meal that good in the fanciest restaurant!
Next time, I'll give your marinade a try.
