I cooked this at a small neighborhood cooking contest last Sat. and everyone ranted and raved over it! I thought I would share for those of you who are looking to add something new that is sure to please.




As a side note, I ended up with a lot of juices in the dish so you may want to discard the chicken juices after it has cooked and strain your cut up tomatoes.
