Rustic Roasted Chicken
Materials:
2 "Y" sticks
1 straight stick
Kitchen twine or string
Good campfire burned down with sufficient hot coals. Cherry or alder added is great!
Ingredients:
1 whole chicken
You may stuff with onions, garlic or whatever, or don't stuff
This is so delicious, it doesn't take alot of seasoning, maybe a little salt at serving time.
Good beer or wine
Cut two "green" Y-shaped sticks. The lower portion should be around 2 feet long. Pound into the ground on each side of the campfire with a rubber mallet or whatever, until they are stable. Cut another green stick that is as straight as possible--around 3/4 to one inch thick. The straight stick should be long enough to settle nicely between the Y sticks.
Thread chicken through straight stick, and tie VERY securely with kitchen string or twine. Otherwise, chicken will not turn so you can cook all sides.
Place chicken in Y sticks and roast, turning every 15 minutes. Depending on your fire, it takes 1 to 1.5 hours to cook. Make sure juices come out clear, when pricked with a fork. Drink good beer or wine while cooking.
Serve with potatoes wrapped in foil and baked directly on the coals, and fresh fruit. (& more beer or wine).
