ISO: caramel apple empanada

I need a recipe for caramel apple empanada like taco bell has. Niece loves em and birthday is coming up in June. Does anyone know what I'm talking about?
 
You're welcome!:) It may be but it seems a little too thick to me to be an egg roll wrapper. I have no clue though. Hopefully someone else will come by with an idea on it.

Oh, I know the ones at Taco Bell don't have nuts so you can omit those from the apple recipe.
 
This is a FABULOUS recipe.

Apple Empanadas
Dough:
4 c AP flour
1 tbsp baking powder
Salt
1 egg yolk
1 whole egg (beaten)
1 1/2 c warm milk
1 c melted shortening

Apple filling:
1/3 c butter
1/2 c brown sugar
4 large green apples (peeled, cored and sliced)
2 tb brandy or Cognac
1/2 ts ground cinnamon
Pinch of nutmeg

1.Sift flour with baking powder and salt. Add egg yolk, egg, milk and shortening. Mix to make a stiff dough.
2.Divide into 20 pieces and roll each thinly into a circle.
3.In a frying pan, melt the butter. Add sugar and stir until mixed.
4.Add apples and stir until apples are coated with caramel. Add remaining ingredients and bring to a boil. Cook for 3 minutes.
5.Place a spoonful of stuffing on half of each dough circle. Fold dough over filling. Wet the edge with milk, fold over again and seal.
6.Bake in a 200F oven until cooked and lightly browned. Serve hot with whipped cream, if desired.
