A friend of mine has a request... can any one help?


The Peach Pie recipe in Dessert du Jour today reminded me of a pie we
used to get when I was a young girl. It was special first because it
was delicious, but secondly, because my mother baked every other dessert
we ever had! This pie came from the "Culver City Bakery" and it had a
regular crust, but inside that crust was a thin layer (about 3/8") of a
spongy cake. On top of the cake layer were the uncooked peaches in a
glaze. Does anyone have a recipe like that, or even more miraculous,
the recipe from Culver City Bakery (in California)? I'd sure appreciate
it!
 
Couldn't find a specific recipe, but from the description you gave, it shouldn't be too hard to imitate. I've seen cheesecake recipes with a layer of sponge cake on the bottom, too.

I'd blind bake the shell, make a simple sponge or genoise and cut thinly to fit inside the shell. Arrang the sliced peaches on top, and glaze with some melted peach or apricot jam.
