BETTY'S TOMATO SOUP CAKE
1 cup sugar
1/2c butter or margarine
Cream well.
Add:
1 can tomato soup
1 level teaspoon baking soda mixed with a little water
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
1 teaspoon mace
3/4 cups walnuts (optional) I use pecans
1 cup raisins, dates or citrus fruits
2 cups flour
2 teaspoons baking powder
Mix well.
Bake at 375°F @ 30 minutes or until knife comes out clean.
ICING
1 pkg cream cheese
1 cup sugar
1 teaspoon vanilla
Banana Icing:
Mash 2 bananas (1/2 cup). Add 1 teaspoon lemon juice. Set aside.
Cream 4 tablespoons shortening and 1/2 cup powdered sugar. Mix well.
Alternate banana mixture with powdered sugar mixture until mixed.
