Caramel Filled Chocolate Cupcakes

How about "Marry Me"?
LOL ok dont ask a sleep deprived girl to name yummy cupcakes. why dont you guys suggest some names? :)

Caramel-Filled Chocolate Cupcakes

Extra Moist Chocolate Cupcakes
250g butter
150g sugar/brown
180g self raising flour - sifted
90g good quality cocoa powder - sifted
4 eggs (room temp)
4-5 tbsp milk
1 tsp vanilla
Handful of chocolate chips
- cream butter & sugar till light & fluffy using electric mixer
- add in vanilla
- add in eggs one by one & beat well
- put down that mixer & add in flour & cocoa powder using a wooden spoon alternating with the milk
- if it’s too dry, add in more milk
- DON’T OVERMIX! will become rubbery
- bake for 20 mins at 180C in a preheated oven
Frosting
300ml whipped cream
2 tbsp icing sugar
- whip together both until peaks form
Fairy Dust
Coffee/Cocoa powder
- sieve over cupcakes
Caramel Filling
80g butter
80g brown sugar
80g milk
- stir all together in a saucepan & boil til thick over low heat (add more sugar if too liquidy)
Caramel Drizzling- add in some icing sugar to drizzle it onto the cupcake tops
Assembling- cool cupcakes, open a hole (may have to take some out), fill it with caramel & close it back
- spread whipped cream over
- dust cocoa over top
- drizzle thickened caramel
- do some cardio, weights & crunches
- PIG IN!!!

Wow, they sound heavenly! I'm off the chocolate for a bit but when I jump back on the sweet wagon, these will have to be made!!!

Yup that is correct! What I did was take a small amount (just enough for drizzling) of caramel then add in as much icing sugar as to make it thick enough for drizzling. :)

You know that sounds REALLY good! Thank you! I may really name it sweet dreams. someone else suggested "ooze da luv" but i may reserve that for like...valentines or something smushy! LOL.
