You don't just have to have pie at Thanksgiving. Resurrecting an old posted recipe (thanks crewsk) for newer members who might like to try this:

PUMPKIN CRUNCH CAKE

Layer 1
One 16-oz can pumpkin
One 12-oz can evaporated milk
3 eggs
3/4 cup sugar
1/2 tsp cinnamon

Mix well and pour into 9 x 13 well-greased pan.

Layer 2
Sprinkle one box (dry) butter recipe cake mix over Layer 1.

Layer 3
Melt 1.5 sticks butter and pour evenly over cake mix.

Layer 4
Top with 1.5 cups chopped pecans.

Bake at 350 for 1 hour. Cool completely.

Layer 5
8 oz cream cheese, softened
2 cups powdered sugar
8 oz Cool Whip, thawed

Mix well and spread on cooled cake. Keep refrigerated.

This (without layer 5) sounds like the "dump cake" someone had at work this week.
It sounds really good. Thanks!

Sounds like something even a nonbaker like me can make! Thanks!
