What is Simnel? I have a recipe for Simnel cake, but I can see nothing on the ingredient list that says simnel. Any thoughts?

Y'know, I never think to look on Wikipedia. Thanks Andy. This one has candied orange peel and dried currants. Interesting. The note on this recipe is that the almond paste sinks to the bottom and gives a sticky top when the cake is turned out. So, no layer in the middle but rather on the top of almond paste.

Can do! Since it is for Mothering Sunday, I thought I might make it for our Moms for Mothers Day. Not the same day, but same intent I think. Its about all I will have time for this mothers day!
