This is my friend Dani's "Summer Cake" - it is beautifully moist, soft and tasty.
Mango Cake
100g Butter
1/2 cup sugar
1 large egg
1 cup SR flour
1/2 cup plain flour
1 tespoon baking powder
1/2 cup coconut
1/4 cup milk
1 cup mango puree
Cream butter & sugar until pale. Add egg. Alternate sifted dry ingredients with combined liquid ingredients. Bake 180 degrees C (i think thats 375 F - but dont quote me) in a 20cm pan for 25-30 minutes. Cool & spread with icing.
Passionfruit Icing
125g Butter
2 cups icing sugar, sifted
2 tbsp milk
contents of 1 passionfruit
Beat butter until pale, beat in icing sugar & milk, stir in passionfruit.
