Finally a Snappy Ginger Snap

I love ginger snaps and every time I would make them they would never get the crisp snap, Until now. I made these American test kitchen recipe and they are excellent !! When they were cooled I had a cup of tea waiting and holy cow I ate 6 of them.

I'm not a huge fan of crunchy cookies so my favorite recipe is chewy, with no snap, but the recipe is still named "ginger snap"

I love the flavor of gingersnaps, but really I would rather have a nice soft cookie with lots of ginger flavor.

My son-in-law loves Ginger Snap cookies. Unfortunately for him, my daughter does the buying of food and never gets them for him. So I will try this recipe. He will get the whole shebang. He is the only one in the family that absolutely loves them.

Wow. I made the ATK recipe, and that's some good ginger snaps. I made them a trifle larger, so they aren't crispy discs. They're nicely snappy outside and softer inside, with powerful ginger flavor and more than a little buttery taste.
