Everyone has heard of the Nanaimo Bar. Well, not to be outdone, I have created the Yooperduper. Bar. It is similar in construction, but tastes so very different. Here's how it's made.

Bottom Layer Ingredients:
1 cup crunchy peanut butter (I like Skippy Super Crunch for this)
1 large egg
1 tsp. vanilla
1cup sugar
1/4 cup flour

combine all ingredients in a mixing bowl and stir until smooth and creamy. line an 8 X 12 baking dish with foil and spread the cookie dough in an even larer in the pan. Bake at 375'F. for 8 minutes. Remove from the oven and let cool.

Middle Layer Ingredients:
1 tsp. Vanilla Extract
1 1/4 cups heavy cream
1 tablespoon powdered gelatin
3 tablespoons milk
1/4 cup sugar
5 egg yolks
1 1/4 cups whipped cream
1/4 cup shredded coconut
1 cup Nutella

place the gelatin into a bowl with the milk. Heat until tepid, and stir to dissolve the gelatin. Separate the eggs. Combine the egg yolks, vanilla, and sugar together. Heat the heavy cream in a double boiler over medium heat. When hot, slowly whisk 1/4 cup of the hot cream into the egg yolk mixture to temper the egg yolks. Slowly pour the Add the tempered egg yolk mixture into the cream. Whisk continually until the cream thickens. Add the milk/gelatin to the hot cream and whisk in. Fold in the coconut. Remove from heat and let cool. Whip the remaining heavy cream to form soft peaks, and fold into the pastry cream. Pout over the peanut butter bar, and cover with plastic wrap, making sure the plastic wrap touches the coconut/bavarian cream mixture. Let cool.

Top Layer Ingredients"
/2 cup butter
1/2 cup graham Cracker crumbs
1/2 cup rolled barley, or rolled oats
1 cup halved Macadamia nuts
2 tsp. ground cinnamon
2 tbs. sugar

Melt butter. Add remaining ingredients and stir until well blended. Remove the plastic wrap from the custard. Spoon mixture evenly over the 1rst two layers. Cover the pan with plastic wrap and chill in the fridge for two hours to set the middle filling.Chief's Yooperduper bar. It's a bit of work, but so worth it. Enjoy.
