We are having a surprise birthday party for my uncle who is turning 80 years old. One of his favorite sweets is chocolate peanut butter balls. I would like to have some recipes for these if anyone has any to share. Thanks a bunch!!!
 
I had a recipe like this and it's not in my book! argh!
Are you thinking about these, or the 4 ingredient ones?
This is from a recipe site that I have relied on many times:


Chocolate Covered Peanut Butter Balls

1 cup butter or margarine
1 1/4 cups peanut butter, smooth or chunky
1 pound powdered sugar
3 1/2 cups Rice Krispies.
6 ounces chocolate chips
1/2 large Hershey candy bar, chopped
2 1/2" square paraffin, shaved

Melt butter in a heavy 2 quart saucepan over low heat. Add peanut
butter, stir until well blended. Remove from heat. Combine sugar
and Rice Krispies in a large bowl. Pour hot peanut butter mixture
over all. Mix thoroughly using hands. Shape into 1 inch balls.
Place on wax paper lined cookie sheets. Cover and refrigerate 1
hour. Combine chocolate chips, Hershey Bar, and paraffin in top of
double boiler. Place over hot water until melted. Dip chilled
peanut butter balls in chocolate mixture to coat. Place on wax
paper lined sheets to set chocolate. When dry, store in refrigerator.
 
These are my favorite!

Peanut Butter Truffles
2 c whipping cream
2 lb white chocolate, melted
2 c peanut butter
1 lb dark bittersweet chocolate
Crushed peanuts, for decoration, if desired

Scald cream in a small saucepan. Remove from heat and chill. Combine white chocolate and peanut butter together in a mixing bowl and blend together. Add chilled whipping cream and continue blending at high speed until a smooth consistency is achieved. Pour mixture into a suitable container and place in the refrigerator for 24 hours to allow mixture to set.

Using a melon baler or a number 70 scoop, form the mixture into balls. Place balls on a sheet pan and into the refrigerator to firm up.

Melt the dark chocolate over a double boiler. Gently dip each ball in the melted chocolate so that it’s fully coated. Decorate with crushed peanuts. Keep truffles in the refrigerator until needed.
 
Don't know if you need any more recipes, but here's another yummy one:

Buckeye Balls


1 1/2 c. peanut butter
1/2 c. butter
1 tsp. vanilla
1 16 oz. pkg. powdered sugar
1 6 oz. pkg. semisweet chocolate chips
2 T Crisco

Line baking sheet with wax paper. Mix peanut butter and powdered sugar, butter and vanilla to form a smooth dough (will be stiff).
Shape dough into balls (2 tsp. per ball). Place on wax paper and put in refrigerator.
Melt chocolate and shortening in microwave. When smooth, pour into small bowl.
Insert wooden pick in ball and dip into chocolate so 3/4 ball is covered. Refrigerate 30 minutes, or until firm. Store in plastic container.
 
This is the one that I have, hopefully, it's close to what you were looking for.


1 cup peanut butter
1 cup powdered sugar

1/2 cup chopped nuts

1/2 cup rice krispies

4 ounces semi sweet chocolate

1 tablespoon butter

Combine peanut butter, powdered sugar, nuts and rice krispies. Chill 15 minutes. Melt chocolate and butter in small pot. Remove from heat. Dip balls in chocolate. Chill

Peanut Butter Buckeyes

1 cup butter, softened
1 package (16 oz.) confectioners sugar
1 small jar (12 oz.) crunchy peanut butter
1 block (4 oz.) paraffin wax
1 package (12 oz.) semi-sweet chocolate chips

Combine butter, sugar, and peanut butter in a medium sized bowl; blend until smooth. Roll into 1-inch balls. Chill. Melt paraffin into the top of double boiler over hot not boiling water. When wax has melted add chocolate chips. Coat balls by dropping into chocolate one by one. Place on waxed paper or in mini paper cups to cool. Makes 5 dozen. Note: The wax can be reduced to ¾ of a block, if desired.
