On a whim made some carmels tonight.

No recipe, just tossed together.

Brown sugar, butter, bring up to a boil( I eye balled the amounts). I added a little honey and some limoncello. Boiled it until the foam had structure and a good solid soft ball when dropped in cold water.

At that point I added vanilla and sat the hot pan in a cool water bath until the edges began to set. I then beat the mixture. When it started to form, I placed on a greased plate then popped in the freezer to cool.

15 minutes I pulled it out, cut into sections and pulled and folded it a few times.

Wow, what flavor. Lemon vanilla carmels!!! wonderful silky texture and just a nice hint of lemon...

Wish I could be more specific, but it was all seat of the pants cooking...

Checking back on this thread makes me remember how those turned out. I wish I could have shared them with you. there were very satisfying..

Give it a shot.. I only made about 1/4 lb. If it doesn't work, you're not out much...
