Use pine nuts,pistachios,or sesame seeds. Almonds could be used butttt;)
Brush a metal baking sheet with veggie oil. In a saucepan, combone2 cups of sugar and 1/4 cup honey. Cook over med-low heat stirring now and then for about 20 min. til sugar begins to melt. Bring to a simmer and coo NO STIRRING 5 min. til syrup is clear. Add nuts of choice and cook til syrup is amber colored about 3 min. Be careful now pour the syrup onto the prepared surface (the metal pan) take a nice sized lemon and use it to smooth the nuts into a single layer. Let cool When cooled say about 30-40 min and hard,slide a thin metal spatula under the brittle and break it into pieces store in air tight containers at room temp makes about 12 servings.
