I've tried this recipe for white chocolate twice and every time I add the vanilla extract the mixture seems to crystallize and break up. This recipe is from a video by Todd's Kitchen (link below). The only thing I did differently is that I substituted powdered xylitol for the icing sugar. I don't think the xylitol is the problem because everything looked fine until I added the vanilla extract.
Ingredients:
50g cocoa butter
1/3 cup icing sugar
1/2 tsp powdered milk
1/2 tsp vanilla extract
Pinch of salt
What could the problem be? This is SO frustrating!!!
