This chocolate/raspberry malted shake is decadent, and sings to the soul of dark chocolate lovers. It is creamy, and thick, with the tart/sweet bite of ripe raspberries accenting the chocolate goodness.

The shake is comprised of tree main flavors; malt powder; creamy chocolate shake; and a raspberry coulis.

Coulis, what is it? It's a fancy sounding French word (everything sounds fancy in French) that means thick sauce. The sauce can be either savory, or sweet, For tis shake, we will be making a raspberry coulis. We will make our chocolate malt, and swirl the coulis into it, so that it's like swirled ice cream, with ribbons of raspberry flavor in the shake. Don't be intimated by this recipe. It's really quite simple, but oh so satisfying.:chef::yum:

Raspberry Coulis

Ingredients:
1/2 cup sugar
4 tablespoons water
zest of 1 orange
12 ounces frozen raspberries thawed

Place water and sugar into a saucepan. Bring to a light boil, stirring with a rubber, or silicone spatula, and wiping the pan sides with your spatula to dissolve all of the sugar. Add the orange peel, and simmer for ten minutes. Add a tbs. or so of water to bring the liquid volume back to a half cup. You now have an orange kissed simple syrup.

Strain the hot syrup through a fine mesh sieve into your blender. Add the frozen raspberries, Cover, and blend until smooth. Pour through the fine mesh sieve to remove the seeds, and into a bowl.. Use your spatula to press all of the coulis through. Chill in you fridge while making the shake.




Ingredients:
Dark Chocolate Mated Milk Shake
This is creamy, and dreamy. If your not careful, your eyes just might roll back in your head with this one. We will use full fat, high quality vanilla ice cream. coco powder malt powder, and dark chocolate shavings, all topped with Chantilly cream (sweetened whapped cream). Are you ready?

Ingredients:
3 cups full fat, high quality vanilla ice cream, or gelato
1 cup whole milk
1/2 cup malted milk powder
1/3 cup dutched, dark chocolate cocoa powder
1 teaspoon vanilla
1/2 teaspoon nutmeg (optional)

Garnish:
Chantilly cream
Dark chocolate shavings

Place all but the garnish ingredients into you clean blender. Blend until creamy smooth. Pour the Shake into tall, frosted glasses to 3/4 full., and drizzle raspberry coulis on top of the shakes. Gently use a straw, or spoon to push it into the shake, trying to make little ribbons. Top with Chantilly Cream, and dark chocolate shavings.

Serve with a good grilled something, i.e. brats, hot dogs, burgers, chicken, ribs, etc., and some fries, or onion rings.

You can also make this Chocolate/raspberry mated shake for a desert, or just for a special treat.

Hint:
Don't limit yourself to raspberry. Dark chocolate goes great with blueberries, banana, strawberry, pineapple, currants, Cherries, Lemon, or lime curd, etc. Be creative. Use the same technique for making the coulis, and make something crazy good.;)
