Curry Beef, Tomatoes & Onions - Rec - TNT

A discussion about curry powder reminded me of a quick throw together dish I serve with rice. I use Mccormick curry powder, so this is not hot/spicy.

1 steak (flank, top sirloin -- whatever you have), sliced across the width to about 1/4" thick
oil
1 large or two med onions, sliced in wedges
2 garlic cloves, peeled & halved
1 large or two med tomatoes, cut in wedges
2 tbl curry powder
1 pkg of frozen peas
salt, to taste
1/2 tsp brown sugar
flour - about 1 tbl

In a skillet with a few tbl hot oil, sautee onions & garlic. Remove onions & garlic. Add more oil to the skillet & cook tomato wedges a few minutes; remove tomatoes & keep on the side. Cook beef, sprinkled with curry powder, until beef loses pinkness - stirring as you would a stir fry.

Add onions, peas, salt, brown sugar & a cup of water. Heat until boiling - reduce heat - cover & simmer about 5 mins.

Combine flour & 2 tbl water & stir mixture into skillet - cook until sauce is slightly thick, stirring as you go. Add tomatoes and cook until heated through. (You could add some sliced shrooms at this point, if you wish.) Serve over white rice.
