Has anyone tried or heard of a recipe using...perhaps 3-5 pounds of ground beef....spread on a cookie sheet. cover with cheese, chopped broccoil, onions and lotsa other good stuff :rolleyes: Roll this up jelly roll style, pop in the oven and bake. When done cut into pieces for serving. It was SO yummy but I had it at a gathering and the server has moved and taken the dang recipe with her.:(

The first dinner my son cooked for my DIL before they were married was a meat loaf flattened out with ham and brocolli and then rolled up and placed in a loaf pan...It must have worked..they have 25 years of marriage so far.

I used to make a meat loaf with spinach prepared the way Dove describes. It was good. Gotta find that recipe.

Frosted Spinach Stuffed Meatloaf

1 lb ground beef
1/2 lb ground pork
2 to 3 garlic cloves, crushed
1/4 cup bread crumbs,plain
1/4 cup parmesan cheese
1 egg
1 box frozen chopped spinach, (10 oz) thawed and squeezed dry
1/4 cup minced onion
1 egg
1/4 cup Italian bread crumbs
1 cup cheddar cheese, shredded
1/8 tsp kosher salt
1/4 tsp freshly ground black pepper

*Cheesy Mashed Potatoes*
5 medium potatoes, peeled and cut into 8 pieces
1/2 cup whole milk, up to 1/4 cup more
Salt and pepper, to taste
1 cup cheddar cheese, shredded

Meatloaf: Mix beef, pork, minced garlic, 1/4 cup bread crumbs, parmesan cheese, and 1 whole egg. On a piece of waxed paper, pat meat mixture into a rectangle (about 9"x15"). Mix spinach, onion, egg, 1/4 cup bread crumbs, cheese, salt, and pepper. Spread over patted meat mixture. Starting at a narrow end, roll meatloaf up in a jelly roll fashion. Place in a loaf pan (one with a fat drip insert). Bake in a preheated 400ºF oven 1 hour. Top meatloaf with potatoes (like frosting a cake). Continue cooking (30 minutes) until potatoes are nice & browned & meatloaf is cooked through. Allow to sit for 5 minutes before slicing. Serves 4-6

Cheesy Mashed Potatoes: Place potatoes in a large pot with enough water to cover. Bring potatoes to a boil over high heat, reduce heat to med. and cook until tender. Remove from heat, drain, add milk (or you can use chicken broth of equal amount). Mash potatoes until smooth. Add salt and pepper to taste. Gently stir in shredded cheese, cover and let sit until cheese melts, about 3 to 5 mins.

MEXICAN MEATLOAF ROLL
1 1/2 lbs. ground beef
1/4 c. oats, uncooked
2 eggs
1 tbsp. Worcestershire sauce
1 tsp. pepper
1 (8 oz.) pkg. cream cheese, softened
1 (4 oz.) can green chilies, drained
3/4 c. salsa
Combine meat, oats, eggs, Worcestershire sauce, and pepper. Mix well. On wax paper, press mixture into rectangle. Combine cream cheese and chilies; mix well. Spread this mixture over meat to within 1 inch of outer edge. Roll jelly roll fashion. Place in baking dish and bake at 350 degrees for 40 minutes. Top with salsa and bake 10 minutes. Let stand 10 minutes before serving.


MEATLOAF ROLL
1 (10 oz.) pkg. chopped broccoli or
frozen leaf spinach
2 lb. hamburger
2 eggs
3/4 c. soft bread crumbs (about 1
slice bread)
1/4 c. catsup
1/4 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dried oregano leaves
1 tsp. salt
1 (3 oz.) pkg. smoked sliced ham
3 slices Mozzarella cheese, each 3 x
3 inches, cut diagonally into
halves (optional)
Rinse frozen broccoli under running cold water to separate; drain. Mix hamburger, eggs, bread crumbs, catsup, milk, 1/2 teaspoon salt, the pepper and oregano. Pat hamburger mixture into rectangle, 12 x 10 inches, on piece of aluminum foil, 18 x 15 inches. Arrange broccoli on hamburger mixture to within 1/2 inch of edges; sprinkle with 1 teaspoon salt. Arrange ham on broccoli. Roll up rectangle carefully, beginning at 10 inch side and using foil to lift. Press edges and ends of roll to seal. Place on rack in shallow roasting pan. Cook uncovered at 350 degrees for 1 1/4 hours. Overlap cheese on top; cook just until cheese begins to melt, about 1 minute longer. (Center of meatloaf roll may be slightly pink due to ham.) Garnish with celery leaves if desired. 8 servings. Do-Ahead Tips: After rolling, cover and refrigerate meatloaf no longer than 24 hours. Cook as directed except increase first cooking time to 1 1/2 hours.


MEATLOAF ROLL
1 1/2 lb. ground round
1 lg. onion, chopped
1 lg. green pepper, chopped
1/4 c. A-1 steak sauce
1/8 c. Heinz 57
1 tbsp. Worcestershire sauce
1/4 c. Parmesan cheese
2 tbsp. ketchup
1 tsp. mustard
1 tsp. garlic powder
1 tsp. italian seasoning
1 egg
1/8 to 1/4 c. salsa
2 c. cooked chopped broccoli
2 c. grated cheese
Mix ground round, onion, green pepper, A1, 57, Worcestershire, Parmesan cheese, ketchup, mustard, garlic,Italian seasoning, egg and salsa. Take large piece of foil or wax paper lay out. Take meat loaf mix and spread into a square about 1/2 thick. Place cooked broccoli onto center of square, put cheese on top of broccoli. Roll up like a jelly roll. Place in pan. Bake at 325 degrees for 1 hour and 15 minutes.
