You might want to be careful with this. I don't know if the sugar in the rum would burn or not.
New York Strip Steak with Rum Butter
Yields: 4 servings
¼ c rum
1 T shallots, chopped
4 T butter or margarine
1 T parsley, chopped
2 t lime juice
½ t Tabasco pepper sauce
four 10 oz New York Strip steaks
In saucepan, combine rum and shallots, bring to a boil Be very careful as rum could ignite! Reduce heat, simmer 2 minutes. Stir in butter, parsley, lime juice and Tabasco. Brush steaks with rum butter.
Grill or broil steaks 6" from heat. Cook about 8 minutes, turning steak once. Brush with rum butter occasionally. Heat any remaining rum butter to boil and serve with steaks. Serve with additional Tabasco sauce if desired.
