Roast Beef with Raspberry/Jalapeno pres.

Roasted another GREAT beef roast. Preheated the oven to 500, lightly salt and peppered the roast, poured the Raspberry Jalapeno preserves over the top, smeared it around.
Popped the roast in the oven on a rack for 15 minutes, then turned down the heat to 300 WITHOUT opening the door. let it roast for another 25-40 minutes depending on size. Check with a meat thermometer. Pull it out at 140F (ok, maybe 135 if you like it a little rarer).. let it rest before cutting... simply wonderful!!!!
