Deep fry pork loin, oil? breading?

I'm making some pork kababs.
I want to deep fry them. Question is, whats the best oil to deep fry them in? I'm looking for taste and flavor in a cooking oil to really inhance the pork meat.
I heard olive oil is good for flavor but not for deep frying? What about corn oil? sunflower?
The only oils I have ever used are veggy and canola.

Also does anyone have a suggestion for a real good BREADING to deep fry the pork kabobs with? I am looking for a breading or seasoned flour that really compliments the pork meat and gives it flavor.
