I don't measure, I add enough to the smell of it. If you can't smell your seasonings then you aren't going to taste them.
5 pork chops
2 eggs beaten
red's hot sauce
2c. crushed saltine crackers
1/2 c. flour
salt
pepper
garlic powder
oil for frying (just enough so one side of the chops are covered)

egg mixture:
2 eggs, red's hot sauce, just enough till the eggs turn dark orange.

coating mixture:
2c. crushed crackers, salt, pepper, garlic powder. If you can't smell the seasonings then add some more till you can.

Clean and dry chops. Heat oil in pan, dip chops in flour, shake off extra flour. Dip in egg mixture. Then, dip in crakers. Coat very well with crackers. Add to hot oil. Fry till done.
 
I love coating pork chops. They come out so juicy that way. But rather than using cracker crumbs, I use whole-wheat bread crumbs mixed with sage, garlic, and onion. I fry until lightly browned on both sides, then finish in a 350' oven for about 30 minutes. They are so juicy and tender that way, and you can change the herbs and spices to your taste. You can even take them out and cover with a good barbecue sauce, like KFC wings.

In any case, they are yummy. I agree with you 100%.
