ISO Italian and Portuguese sausage recipe

i make my own italian sauage with fennel seed, salt, pepper, garlic powder, and a dash of pepper flakes and it seems to come out pretty good. just wondering if theres anything i can add to make it better or if there is a good recipe that you know of.

i like to know how to make my own sausage because i like to use ground turkey alot.

i would also like to make portuguese sausage/linguisa but have no clue where to begin. any help would be appreciated.

I'm not sure just what you're looking for..I do know linguica is mainly made with pork but, i'd suppose turkey could be used..Here is an recipe from Emeril

I think is Heavy on Smoked Paprika.

Here we call it Chorizo... it is very Red in color..
