if you have enough you can use it instead of meatballs in some spaghetti sauce.

A Chili with it could also be done.

I am pretty sure I have posted a recipe for noodles with peanut lime vinaigrette--Asian noodles. It is really good with leftover pork added.
Burritos. Stir fry with vegetables. Add to baked beans.

I make a pork chop suey, add can of chop suey veg's. , thicken w/four and water simmer for awhile, add a little soy sauce, and serve over rice, w/rice noodles! Love it

I would just heat up the leftover pork loin top sirloin roast and make a baked potato with some vegetables and a great ceasar salad.

You could make hot roast pork sandwiches. Place one piece of thick-sliced bread or toast on a plate and top with a scoop of mashed potatoes . Layer slices of meat on the potatoes, then ladle your favorite gravy over the top. That's good ole Southern Illinois Cookin'.
