last night I cooked pork chops.
I coarsely chopped 6 eshallotts and lay them on the bottom of an oiled casserole dish.
I then added layers of two large potatoes sliced.
generous addition of ground black pepper and salt to taste.
I then lay the chops on top and sprinkled with chopped parsley and sage.
I then added a layer of sliced nectarines and sprinkled with a 2 x tsp of sugar ( I didn't have apples )
I added 1/2 cup of white wine.
I then put it, covered, in a 160C (320F) oven for 2 hours.
I then removed the cover and cooked for another 1/2 hour @ 200C (390F)
till wine had evaporated.
