Pork Kidney Recipes

Anyone have any recipes for them they've tried & enjoyed?

I have two pork kidneys in the freezer, & having never cooked them before (but have enjoyed beef & lamb kidneys in the past), am looking for ideas.

After an internet search, currently have one Chinese & one French recipe that both look interesting. But am wondering if anyone here has cooked them before & might have some ideas.

I flour them lightly and fry with onion and peri peri sauce then serve with toasted Ciabatta.
