Pork loin

I had this beautiful piece of loin yesterday. Cut a hole into the middle of it, all the way through. Pushed a long piece of polish sausage in there.
Salt ,pepper, garlic and in the oven it went.
When it was almost done, I brushed a thick layer of honey mustard on it.
It came out great.
Served it with mini veggies and fingerlings roasted in goose fat.

Sounds good! Have you tried other sausages as well?

No, but probably will. The honey mustard works really great on this. Bakes on top like a golden brown crust and the taste is really awesome with the meat ans sausage.
I think I will try with different sausages and maybe different glazes?

Nice! I have stuffed pork loin stuffed with stuffing as well. I will have to try honey mustard as I typically use mustard.

Try wrapping that loin in bacon before cooking. I saw it on another forum and it is excellent.
