I had an excellent dinner tonight! 5 hour slow cook over mesquite charcoal. I skinned the shoulder but then just scored the inside of the skin and layed it over the top of the roast for the first 3 hours.

Sage, curry powder, chili powder, smoked paprika, onion powder, garlic powder, salt, sesame oil. (I like oil rubs instead of dry)

I took before pics but totally forgot to take afters!!
 
YUM!!! I'll have to give mesquite a try again...I've never been a fan. I recently had a whole hog that was slathered with a similar oil rub. The curry was fantastic!
 
It came out great. I was so anxious to try it that I totally brain farted on after pics! Curry is a great pairing with southwest flavors!

I put in all the powders and grinds for a regular dry rub, then I add enough oil (sesame adds a great dimension to the flavor) that I have a lose paste and then I apply that to the meat.
