Some pictures I took of last night's dinner.

The stuffing. Apple, mushrooms, slivered almonds, onion, panko crumbs

(This space left intentionally blank because I forgot to take a picture of the stuffing on the loin before I rolled it )

Browning in bacon fat

Placed on the gas grill indirect at about 375F with some apple wood chips on one burner. Apple juice and a little olive oil in the pan

Cook bacon until crispy and reserve

Getting there

Diced potatoes cooking in bacon fat

Potatoes done and flour added to make gravy

The rested loin (oops, tore a little crust :()

The juice the loin was cooking in (plus a little more) and the reserved bacon are used to make the gravy

Looks like we picked up a small smoke ring

Dinner is served

Thanks.
I'll turn the leftovers into an open faced sandwich for lunch.

My earlier post disappeared!

Oh well, I said your roast looked fantastic and that I had to make it soon.

Just imagine this post is higher up on the page.

Just by looking at the title I knew it would be awesome. This looks juicy and moist and soft and tasty.... Was it ? ;)

Thanks, all.

Andy, if you can imagine I took a pic of the layed out loin with the stuffing before being rolled, I can imagine your post is higher up

French guy, the pork was very moist.

My post disappeared, too...said something about how good that looked.

I also said something about the pod people seeds on the plate.
