TNT Pork Chops/Wine

One of my favorite ways with chops. beat 2 eggs Salt and pepper 4- 3/4 inch thick chops Dip them in the beaten eggs then into 1 cup of unflavored bread crumbs. Press the crumbs into the chops with your palms or the heels of your hands. This will help them stick. But they have a tendancy to want to come of while cooking. Now let the chops stand for 15-20 min. Melt 3-4 tab. of butter with 1-2 tab. of evoo. When butter foams add the chops. Cook over med. heat 3-5 min on each side. til golden and has a nice crust stir in 1 cup dry white wine, cover and simmer 20 min adding more wine if sauce starts to get dry. If you feel there is too much wine uncover the last 5 min Put chops on platter spoon sauce over chops sprinkle with fresh chopped parsley serves 4 I like to add some extra butter to sauce a tab. or 2 It makes it so tasty.

I find breading will stick alot better if you dredge the chops in seasoned flour and shake off all the excess before going in the eggwash.
