ISO help/tips with slow-cooked lamb roast

I am going home to cook my mum christmas lunch, she has asked for a slow cooked lamb roast. How do I do this?
 
Poke some holes in the roast and studd with garlic.
Rub it with some spices. (s&p,rosemary,thyme,garlic powder)
Put in a oven pan with some liquid (1/2 bottle of white wine)
Cover and bake at 275f until done.
I have started to like mint jelly with mine.
 
Great if it has the bone in. If it is butterflied, make sure to tie it up first. If it is butterflied, you can also smear the inside with the garlic, herbs etc.

I agree, mint jelly is the perfect paring along with new potatoes. Now I am hungry.
