Lamb Steaklets with a stilton sauce

I make this quite alot..Mmmm

2-4 Lamb steaklets ( must be the best cut)

for the sauce:

stilton cheese (a good wedge of it)
single cream or creme fraiche - about 4-6 big tablespoons
mushrooms about 6 - diced
half of a small lemon, freshly squeezed
2 tea-spoons of french mustard or djon mustard
knob of butter

i allways griddle my lamb, i have it medium cooked,

in a pan melt the butter gently
then add mushrooms, cook until soft
then add the stilton cheese, let it melt gently
add cream or creme fraiche,lemon juice & mustard
simmer for about 5 mins making sure all the ingredients have melted

i serve it over my lamb with new potatoes & vegetables, montoutes,fine green beans & carotts:chef:

oh & a bottle of red wine :-p
 
I am not a fan of mushrooms or creme fraiche, but this really does sound good. Thanks for posting!
