I know I feel like I can taste the difference when it's mostly venison. Of course, taste can be deceptive when you know you're tasting something different. But I also think there's a little difference mouth feel. I guess venison is sort of a "harder" meat than tame beef. The venison chili is "meatier," if that make sense. I don't get nearly enough chances to use it.
