Not sure if the American and Aussie meanings are the same. Here, a cordial is an alcoholic drink made from fruit, usually sipped after dinner as a digestif. I'll choose cordial

Mushrooms, because of their nutty flavor.
I love potatoes but you can replace them with pasta, squash etc...
A mushroom is a mushroom.
