Baby Portobellas in Gumbo

Depending on the gumbo, the actual mushroom flavor might be lost with the robust seasonings used. You never know until you try it though!

I think it depends on the meat..

if you are making chicken/sausage gumbo, it sounds fine..

but for seafood gumbo, I think the mushrooms would overpower the delicate seafood taste..

if you have a Lot of mushrooms, I bet you could make a Mushroom Gumbo!

could be the next new trend!

Sounds like a waste of perfectly good portabellas to me... but then gumbo has never held any charms for me. Now those burgers... that is an idea worth entertaining!
