Here's a good summer soup that is quite tasty and super easy.

Chilled Avocado Soup

Blenderize till smooth:
1 peeled, pitted and sliced avocado (Preferably Haas, or one that is really "buttery")

1/2 c. chicken broth (or you can use bouillon cubes in hot water, but make sure you cool it down before using)

1/2 c. sour cream

1/2 c. light cream

Grated rind of 1 lemon

Put into a bowl and cover tightly with plastic wrap.
Chill 4 hours. Garnish with fresh dill or sliced chives.

(The surface will darken, so just before serving, discard the top 1/8", then just stir it and serve)
 
You can go a little wild with this recipe too - sprinkle diced green chiles and chopped onions on top, and even a little tomato and it's really peppy!

Or you can go sweet, and top it with a dollop of unsweeted whipped cream topped with a strawberry fan garnish.
