Harry, instead of tossing your chopped vegs into the boiling water try this:
melt a little butter in a saucepan ( the one you intend to make the soup in ) then put the vegs in and sweat them for a few minutes, turning them over in the butter. Then very slowly stir in a tbsp of plain flour along with your seasoning, salt pepper, whatever; a stock cube of you have one, then add the water ,slowly,to prevent lumps froming, bring to the boil, turn down and leave to simmer for as long as you want. Try it. Sweating the vegs first brings out the flavour more.
