I want to make lentil soup tomorrow and just discovered that the "ham hock" i bought is a fresh, not smoked one. Can I use that, or should I get a smoked ham hock. How would you use a fresh one?

You can use it. The only thing missing will be the smoky flavor. But the ham taste will be there. Ham hocks whether smoke or fresh are usually boiled. Either in soup or a boiled dinner. :angel:
 
I'd use it too. If you want a smokier taste, a drop or 2 of liquid smoke or some bacon would add that.
