Meatball soup! I need suggestions!!

My oma used to make this wondering soup with meatballs I it. I have the soup down pat, but for some reason I am clueless as to how to make simple meatballs.

Ts almost embarrassing to ask, lol, I make meatballs for entrees andnother dishes , but the ways I know how to make them just have too many complex flavor and texture.
I just need help on a simple, (almost tastless) meatball recepie..
Small ones, like 1/4 - 1/2 "
 
Here's a recipe I use for my Mom's meatball soup. It's an Armenian dish but the meatballs are mild-flavored.

1 Lb Ground beef or lamb
¾ C Bulgar (fine grind)
1 Onion, minced or pureed
TT Salt & Pepper
C Water to blend

Combine the ingredients and form into meatballs.

You can use rice in place of the bulgar if you like.

2 Eggs
Up to a cup bread crumbs or panko
parm cheese
1/2 cup milk
1tbs salt, pepper
garlic
1/2onions,.

You're right. That does sound good and simple. I can't use bread crumbs or panko thanks to diabetes, but do you think oatmeal woud be a decent substitute?

Never tried oatmeal but I think that would be fine. You can also try it without. Or maybe rice or nuts?

Meatballs
•1 pound ground pork

•1/4 cup finely chopped fresh basil
•4 garlic cloves, minced
•3 green onions, finely chopped
•1 tablespoon fish sauce (such as nam pla or nuoc nam)
•1 tablespoon hot chili sauce (such as sriracha)
•1 tablespoon sugar
•2 teaspoons cornstarch
•1 teaspoon freshly ground black pepper
•1 teaspoon coarse kosher salt

I will play around with these recepies. Some of these do sound very close. Ill post the ingredients after ive made them n let you know how it turned out!!
 
For a simple to make, and delicious meatball, here's another easy option.

1 lb. ground beef
1/2 lb. pork breakfast sausage
1/4 cup minced green onion
1 tsp. granulated garlic powder
1 tsp. salt
1 large egg
1/4 cup whole milk
1/2 cup rolled barley

Combine all of ingredients and mix until smooth and all of the milk is incorporated. Pan fry until lightly browned on all sides. Add a little water, or sauce to the pan, cover, and simmer for a half hour.

Option 2: For a more Mediterranean flavor, change the breakfast sausage with Italian sausage, and add 1 tsp. each; oregano; basil; thyme; and rosemary. The other ingredients remain the same.

Option 3-Southwestern Meatballs (use in tortilla soup);
1 lb. ground beef
1/2 lb. ground pork (or Mexican Chorizo)
1 large egg
1/4 cup milk
2 tbs. chili powder
1 tsp. salt
1 onion, minced
3 cloves garlic, peeled and minced
3 tbs. minced sun-dried tomato
1/2 tsp. ground cumin
1/2 tsp. ground coriander
minced peppers to taste (I like to use hot peppers, but sweet bell peppers are great as well.

Option 4 - Chicken Meatballs:
1 lb. ground chicken
1/2 lb. ground pork
1 stalk celery, minced
1 onion, minced
1 tsp. chicken soup base dissolved in 1/4 cup hot water
2 cloves garlic, minced
1/2 tsp. Chinese 5-spice powder
1 large egg
2 tbs. soy sauce

These are a bit goupy to work with, and are best roasted in the oven, on parchment paper.

Why not? It is used in meatloaf also. And it is a recommended grain for diabetics. :angel:
 
I guess that's a good way to get some oatmeal in my diet. I've bought some, but just stall about making it. I just never did like the way it looks - gray gruel. :sick:

That's what I did today!
My meatballs are far from tasteless though
I make up a big batch of
equal amounts ground beef, veal and bulk Hot Italian Sausage
a handful of homemade bread crumbs (it's better than that stale stuff)
a little milk to moisten
a beaten egg
a handful of grated Parm
dried Oregano
minced garlic
minced fresh Flat leaf Parsley
S&P

I use a 1 1/2 Tbsp disher, scoop them out onto a foil lined sheet pan
half some of the balls for make smaller ones for soup
(or in today's case soup and Baked Ziti with mini meatballs)
I IQF them of sorts in my chest freezer and then once solid masses,
I put them into a ziptop freezer bag for later use
