Most Excellent Norwegian Salmon Soup (Laksesuppe)

Recipe is from a first generation Norwegian-American, found at the International Festival in Columbus, Ohio, November 3 & 4, 2007. I had a cup both days; with a piece of dark bread naturally. Easy and good. Enjoy, David C

1-1/2 cups of cubed potatoes
1 cup carrot slices
1/2 cup chopped green peppers
1/3 cup chopped onions
1/4 cup of butter

1 16-ounce can of tomatoes
1/2 teaspoon of salt
1/8 teaspoon of black pepper
1/8 teaspoon of ground thyme

3 cups of milk
1 10-1/2 ounce can of cream of celery soup

1 16-ounce can of salmon

Sauté onions, potatoes, carrots and green peppers in butter for about ten minutes in a large sauce pan, stirring frequently.

Add tomatoes and seasonings.
Cover and simmer for 6 to 8 minutes until vegetables are tender.

Incorporate milk and celery soup and stir into soup.

Add drained, flaked salmon.

DO NOT BOIL
Bring to serving temperature over low hear and enjoy a taste of Scandinavia!

(Yield: 9 cups)

all they have to do is go to my mom's house to find another one. ;)

j/k, thanks for the recipe, david. creamy salmon soup sounds very norwegian. my mom can do magical things with salmon and loves creamy soups, so i'll have to make it for her someday.
 
Good Soup

Thanks buckytom, yes the had a nice large Scandinavian Club section. When I tasted their Norwegian soup my buds were poppin - WOW - new taste for me and most excellent. For anyone like me don't be afraid of it. :chef:
 
I just now saw your recipe, David. I eat soup for lunch quite frequently, and this looks like a winner to me!
