I made this with some strange leftovers. Feel free to sub.
1 T olive oil
2 c leftover roasted vegetables (I used cauliflower, carrots, and rosemary)
1/2 c shredded smoked turkey
1 onion, sliced
3/4 inch slab low fat Velveeta
1 t Better Than Boullion Chicken (or a cube or two of chicken boullion)
3 sliced green onions
1/2 c cooked quinoa
Juice of 1/2 fresh orange
1 qt water
Carmelize sliced white onion in olive oil over medium heat. Rinse quinoa, cook according to package directions in microwave. Add remaining ingredients. Cook on low for 20 minutes.
