The Ultimate Mushroom Soup
For those of you lucky enough to have a wide variety of mushrooms available to them, this is the real deal.
1 fresh (or dried) porcini mushroom
2 shaggy mane mushrooms
1 largw portabella cap,
1 king bolete
1 chicken of the woods
4 tbs. butter
3tbs. minced onion
3 tbs. flour
Wash all of the mushrooms. Chop all mushrooms into little chunks. Melt buttter in a 3 quart sauce pan. Add the onion and mushrooms and saute until the onion is tender. Adds the flour and cook until blonde roux is formed. Thin with half and half to make silky-smooth soup. Serve with good dinner rolls.
