Basic Italian Wedding Soup that my family makes during the holidays
*For any Experienced Canner's that cross any of my recipes, I would really appreciate feedback if it would be safe to can in a pressure canner. I'm trying to save room in my poor, overstocked freezer.

Ingredients:
whole chicken (I use a 3lb roaster chicken)
1 or 2 jars Wylers Chicken Powder
1 1/3 pound ground round
2 heads escerole
1 or 2 lbs orzo pasta

Directions:
*use the ground round to make tiny meatballs.
*clean chicken and place in bottom of pot
*fill pot with cold water
*bring water to boil then turn heat to medium
*boil over medium heat till fully cooked 1-2 hours
*remove chicken
*add enough chicken powder to your liking
*add meat balls and cut up escerole
*let simmer for another 1/2-1 hour
*you can bring the soup back to a boil and add the orzo right in the soup or you can cook the orzo separately.
 
Ah...Italian weddings....they really know how to eat in style! (I stopped counting after 5 courses!). When the soup appeared I went to get the bread roll and everyone was aghast, some saying "don't eat the bread!"
I soon found out why....wow!
